Aloo brinjal tomato curry ;
Ingredients;
1-cup potato pieces peeled and cut in to cub like pieces.1-cup cube like brinjal pieces keep in cool water ,
1 sp red chilly powder,
1/4 sp turmeric powder,
salt to taste,
2 sp oil,
1 tomato small pieces,
onion slices 2 sp,
3 graan chilly slices,
water 1/4 cup ,
coriander leaves and curry leaves 2 sp.
1 sp curd,
method;
1.Take a pan add oil add onions and chilly fry for 1 min close the lid.2.After saute the onion pieces add patao pieces and saute for 2 min.
3.After add brinjal pieces and add salt and turmeric saute for 5 min .
4.Add tomato pieces and saute for 5 min close the lid.
5.After that add red chilly and and salt and curd allow to cook with little amount of water .
6.Ater curry is well cooked switch off the stove and garnish with coriander and curry leaves .
7.Serve hot with rice and roti.
