Carrot Beans Coconut Fry



Ingredients:

·         Carrots – ¼ Kg
·         Beans – ¼ kg
·         Cilantro – 2 Bunches
·         Oil/Ghee – 1 tb Spoon
·         Red Chilli Powder – 2 T Spoons
·         Turmeric – 1 Pinch
·         Salt – Tasty
·         Seasoning Ingredients – 1 T Spoon
·         Red Chillies – 3 Nos
·         Garlic cods – 3 Nos
·         Curry Leaves – 3 Bunches
·         Grated Coconut Powder – 1 Tb Spoon
·         Onions – 1
·         Green Chilli – 2 Nos
·         Cumin Seeds – ½ T Spoon


Method:

·         Wash the beans and peel the extra edges on both sides and cut in to small pieces and keep aside
·          Wash the carrots and scrap well cut in to small pieces and keep a side
·         Switch on the stove, place the Kadai add water and boil by adding 1 T Spoon salt
·         Add carrot pieces and cook for 10 minutes
·         When they are well cooked separate from water and keep aside
·         in the same water add beans and cook for 10 minutes on low flame and separate from water and keep aside and drain
·         Place the Kadai on the stove add ghee and heat
·         Add seasoning ingrdients and wait for crackle
·         Add curry leaves, cumin seeds fry for 2 minutes and add onions and green chillies and fry for another 2 minutes
·         Add carrot pieces fry for 5 minutes on low flame
·         Add beans fry for 5 minutes on low flame add salt and red chilli powder, coconut powder and fry for 2 minutes
·         Add cilantro turn off the stove
·         That’s it your tasty carrot beans fry is ready to taste
·         It can be serves as a side dish for Dal or Pappu
