Cashew Nut Egg Curry



Ingredients:

·         Boiled Eggs  -3 Nos
·         Cashew Nuts – 100 Grams
·         Tomato Sliced – 2 Nos (Med Size)
·         Chopped Onions – 2 Nos Medium Size)
·         Green Chilies – 2 Nos

·         Salt – Tasty
·         Curry Leaves – 1 Bunch
·         Red Chili – 2 Nos
·         Seasoning – 1 T Spoon
·         Cumin – ½ T Spoon
·         Oil – 2 T Spoons
·         Red Chilli Powder – 1 Tb Spoon
·         Turmeric Powder – 1 Pinch
·         Milk – 1 Cup
·         Coriander Powder – 1 T Spoon
·         Mustard Oil – 1 T Spoon (Optional)

Method:

·         Turn On the Gas Stove and Place the Non Stick Kadai, Pour the oil
·         Heat the Oil after that add Mustard oil (because it will gives a fine flavour to the egg curry)
·         Now add the boiled Eggs in to the oil and fry until the egg surface colour changes to yellow and take out and keep it separate
·         Add Cashew Nuts and fry until brown colour Take out from Non-stick Kadai and keep aside
·         Add seasoning (Including Red chillies, cumin etc..) and wait for crackle
·         Add chopped onions, Green chillies and fry for 2 to 3 minutes (until onion loses raw ness) you can fry by closing the lid also.
·         Add Curry Leaves and fry for few seconds
·         Add Chopped tomato slices and fry for 2 to 3 minutes by closing the lid
·         Add Turmeric powder, Red Chilli powder and salt fry for 1 Minute
·         Add the fried Golden eggs and mix well close the lid and saute for 2 Minutes
·         Add Boiled milk and mix well close the lid and cook for 5 minutes
·         After 5 minutes add fried Kaaju, Coriander Powder mix well cook for 2 Minutes by closing the lid
·         That’s it your tasty and delicious Kaaju Egg Masala curry ready to serve hot
·         This curry is well served with rice.
