Attamma Biryani (Traditional Biryani) (ఆంధ్ర బిర్యాని)

 

Ingredients:

Basmati rice                       -1 Kg
Potatoes                             -1 Cut into Cubes
Onion                                  - 4
Carrot                                 - 1 Cut into Rounds,
Biryani Masala                  - Star anise-4
Nutmeg                              - 1 (Make Powder) (Jajikaya)
Cloves                                 - 5 Nos
Cinnamon sticks               - 3 Nos
Cardamom                        - 5 Nos
Bay leaves                         - 3 Nos
Mace                                  - 3 (Japatri)
Mailong- Marati mogga - 5Nos
Shawjeera                          - 1 Spoon
Salt                                      - Required,
Ghee                                   - 1 Cup
Oil                                        - 1 Cup (200ml)

Method/Preparation

  • Wash Basmati Rice and Drain,kept a side.
  • Take deep bottom vessel and add oil and Ghee and add Onion,greenchily and fry for 2 mints.
  • Add potato,carrot,and add all ingredients and fry for 1 minute.
  • Add ginger garlic paste and fry till raw flour goes out.Add salt tasty and mint,coriander leaves.
  • Add 1&1/2 Liter water and boil till rolling boil.
  • Add Drained Rice and cook on high flame for 10 mints.
  • Place lid and cook on low flame till Biryani cooked well.
  • Spray 1 spoon lemon juice and 1 spoon Ghee,dish out.
  • Yummy Biryani is ready,taste with Gongura and chicken curry.
